Culinary traditions – tomato sauce

Italy is a land where culinary traditions are handed down through generations. Some families still make their own tomato sauce, la salsa, at home. Once a year the whole family gathers to get involved in this event, which becomes a further occasion to be together and enjoy each other’s company!
A couple of quintals of tomatoes are carefully washed, cut, boiled and “passed” through the tomato press. Then the sauce is bottled and the bottles are boiled again to allow sterilization and long-term storage.
Those who still follow this tradition affirm that they can tell the difference from homemade and commercial tomato sauce, and the result is definitely worth of some fatigue. Pasta al sugo or alla bolognese, lasagne, pizza, fish soup and many other recipes will benefit so much from the addition of the genuine homemade salsa!
